Recently, I have seen a ton of different recipes for Quinoa Bites on Pinterest. And since I bought a giant bag of Quinoa a few months ago (because apparently it’s really good for you), and am still struggling to find things to make with it, I thought I’d take a stab at these.
The awesome thing about Quinoa Bites is that you can pretty much add whatever ingredients you want to make endless flavors. I made Buffalo Quinoa Bites (not a surprise since my hubby and I love us some buffalo sauce). Good news part 2: they are super easy to make! The other thing I like about these is that I think this recipe does a great job of hiding the “quinoa taste” (because, yes, I do think Quinoa has a distinct grainy taste), and all you are left with is the texture and the delicious ingredients you added.
Mix all ingredients together (with the exception of bread crumbs or parsley, if you are using them). Grease a muffin tin, and put two spoonfuls into each muffin cup. Optional: Sprinkle bread crumbs or fresh parsley on top! Cook for 15-20 minutes (or until starting to slightly brown on top) at 350 degrees.
We dipped the buffalo bites in ranch, but you could also do blue cheese, or skip the dipping all together!
